Crazy avocado salad! Creamy and satisfying, great salad for a meatless dinner night. Cube 2 avocados, 4 scallions, 4 medium pickles, 2 Israeli cucumbers, and 1/2 bunch of your favorite (parsley, dill or cilantro) finely chopped greens, 1 can of sweet pees. Dress with 2 tbsp of vegenise or mayo. Add salt and pepper to taste. ZESTY NOTE: avocado is rich in healthy monounsaturated fatty acids, which promote cardiovascular health and lowers cholesterol!
